The Inspiration: Winter with Summer
I affectionately call this flavor Winter with Summer. It’s a nod to a short but unforgettable season of my life—when I worked as a pastry cook at Lola in Cleveland. During that time, I had the privilege of working alongside a brilliant pastry chef named Summer, whose creativity left a lasting mark on me. One of her flavor profiles that stuck with me the most was a dessert featuring raspberry, lychee, and lime. I never forgot that combination—the way the tart, sweet, and citrusy notes danced together. Years later, it inspired this very marshmallow, blending my wintery beginnings in pastry with the sunny brightness of Summer’s influence.
